Sean C. McCollum is a Ph.D. student at the University of Oklahoma studying food history. In particular, the adaptation of kitchen gardens in frontier Colorado. The achievement of nutritional sovereignty through the household garden was central to settler health and permanence, and Sean explores how garden vegetable crops were selected, raised, prepared, and eaten.
Sean earned a B.A. in both History and Foreign Languages in French from Texas Tech University, and an M.A. in History from Colorado State University. Sean has spent the previous three years instructing American History seminars at Front Range Community College in Fort Collins, Colorado.
